First up is our favorite vegetarian taco recipe. It’s simple, convenient, and tastes great!
Ingredients:
1. 1 bell pepper (any color), diced
2. 1 can black beans, drained and rinsed
3. 2 tablespoons chili powder
4. 1 tablespoon cumin
5. Salt and pepper to taste or 1 teaspoon each chili powder, cumin)
Mix together all ingredients in a bowl until evenly mixed. Taste for seasoning (salt and pepper may be needed). Preheat grill or oven to medium high heat. Grill/bake the bell peppers until slightly softened but still firm – about 5 minutes on each side should do the trick. Assemble tacos by placing some beans mixture inside warm tortillas then topping with grilled veggies if desired.
